After a bit of frustration, I contently discovered that the only result rendered regards Young veal carpaccio – root vegetables – birch fondue with swiss chard. Therefore, I decided to take on a mission. I had a vision to create delicate and unforgettable dishes using rich ingredients from nature’s treasure chest in South Tyrol.
